2. Travel Guide to Thoai Ngoc Hau Tomb

Thoai Ngoc Hau Tomb, also known as Son Lang, is a rare intact architectural work typical of the Nguyen Dynasty remaining in the South.  This is a great and beautiful work, very valuable in terms of culture, history and architecture.

Look at overall from a far, on the slopes of Sam mountain next to the Vinh Te canal, the majestic tomb area, green with the remnants of great trees.  Son Lang is located at the foot of Sam mountain, next to countless other monuments, but strangely, it is never noisy like other temples here but always has a quiet, dignified and respectful atmosphere. The mausoleum is both a mausoleum and a temple, worshiping Nguyen Van Thoai, i.e Thoai Ngoc Hau, an official of the Nguyen Dynasty, sent by the court to explore and guard An Giang.

According to historical records, he was born on November 25, 1761 in Dien Phuoc district – Quang Nam province, and died on June 6, 1829.  He is a mandarin that the Chau Doc and An Giang people are extremely grateful for for his great contributions to the people and the country during these years as a mandarin.

Talking about the merits of Thoai Ngoc Hau to the An Giang region as well as to the whole Southern region, it is enormous and indescribable.  He gathered exiles, reclaimed land, and developed agriculture.  Under his rule, the deserted areas, uninhabited forests became lush lands, people focused on living peacefully and affluently.  In particular, his greatest contribution to the South was the organization of digging two strategic canals, Thoai Ha and Vinh Te canal, which were extremely important in traffic and trade at that time.

It is because of the extreme gratitude of the people of Chau Doc for him that Son Lang is always cared for by the people here with a rare beauty.  The trees are meticulously trimmed, the large yard is always clear and beautiful.  The entrance to the mausoleum passes through nine very majestic laterite steps.

Thoai Ngoc Hau’s mausoleum was built on a green stone foundation, located adjacent to Highway 91, facing the north facing Ba Chua Xu temple, leaning against the cliff of Sam mountain, built by Thoai Ngoc Hau himself at the end of the 20s of the 19th century.

The whole painting mausoleum is a harmonious architectural block.  Surrounding the mausoleum is surrounded by thick, solid cast walls higher than a person’s head, in front are two large semicircular doors in the architectural style of the old mausoleum, two opposite rows on both sides.

To enter the mausoleum, you have to go through 9 laterite steps transported from the East.  In front of the mausoleum is a prominent courtyard with a long communal house, inside there is a copy of Thoai Son stele.  The middle area is the tomb and the temple, the two sides are two rows of anonymous tombs.

In addition, on both sides of the mausoleum, there are tombs of different shapes: oval, elephant-shaped, peach-shaped, hat… These are all anonymous tombs of courtiers, bodies.  Ethnicity and the men and militiamen died while participating in the Vinh Te canal digging.  Legend has it that the peach-shaped grave and the hat were the main double peaches in the choir that performed for him while he was still alive.

Next is his temple, which was built extremely majestically and splendidly, with its back leaning against the rolling cliff, creating an extremely majestic and majestic temple shape, ancient.  The temple is very sophisticatedly decorated, in the middle of the temple is a bust of Thoai Ngoc Hau, 2m high with enough weight to wear a crown like at the time of the tide, eyes overlooking Vinh Te canal, creating a very dignified atmosphere.

Hang Pagoda is not only famous for its captivating scenery, but it is also associated with many thrilling anecdotes and legends.  The pagoda was formed around 1840 – 1850, originally as a bamboo and leaf temple, created by Mrs. Tho, whose real name is Le Thi Tho (1818-1899), legal name Dieu Thien, a tailor in Cho Lon.  as a place of practice, at a young age.

According to the story, Mrs. Tho also had a family before, but because her husband’s family was too strict, she got discouraged and fled to Sam mountain, went to Tay An pagoda to cut her hair and become a monk while taking medicine and ringing the doorbell and hope to end the predestined career soon.

After spending time at Tay An pagoda, she realized that this was not the right place for her because many people frequented and watched by local authorities.  Therefore, in 1950, she left Xi’an to find another place to practice, hoping for a peaceful place.  On the way, she found a cave about 1km from Tay An pagoda, immediately set up a monastery, which is the original origin of today’s Chau Doc Hang Pagoda.

According to anecdotes, next to the am tu there is a deep mountain cave, with a pair of unusually large snakes in the cave.  But since she came to practice, the pair of snakes were no longer fierce, but often came to lie down and listen to sutras.  Gradually, the pair of snakes were tamed, often coming to eat vegetarian food, watch out for wild animals and crooks, and protect Ms. Tho’s religious place.  She named them Thanh Xa, White Snake and after her death, the pair of snakes also suddenly disappeared.

Since ancient times, this mountainous land has been associated with many legends, from white tigers to three-legged tigers and giant snakes.  But any beast, no matter how aggressive, when hearing the sound of sutras, will be tamed, only evil with bad people, defending the cultivators, the honest people.

Therefore, the oral story about the pair of snakes associated with this nun is like an admonition about punishing the wicked and saving the good.  People around here all know the legend of Chau Doc Hang Pagoda by heart.  Every time a tourist passes by, sitting by the lotus lake, the corridor of the temple is more interesting to hear.

In 1885, thanks to the virtue of female nun Dieu Thien, he said Thong (Nguyen Ngoc Cang) in Chau Doc and the people around the area donated their own money and rebuilt the pagoda: the floor was tiled with Chinese bricks, and the poles were made of mahogany.  cars, wooden rafters, roof tiles… In 1937, the Most Venerable Thich Hue Thien (1904 – 1990) upgraded the pagoda for the second time.  Today, in the life of the third abbot – Most Venerable Thich Thien Chon, the pagoda is in the process of being completed…

3. What to Do –See – Eat at Hang Pagoda

A cave in the Hang Pagoda – An Giang Hidden Gems

Located on the slopes of Sam mountain, Hang Pagoda gives visitors a wonderful feeling.  A very charming space but equally sacred.  This one-hundred-year-old temple has an extremely open view and a quiet, solemn space.

Hang Pagoda is surrounded by deep green forests of majestic mountains, many species of trees bloom in season to color the whole area, bringing a poetic picture to Hang Pagoda.

To visit and worship Buddha at the temple, visitors must follow the steps built of stone blocks, quite steep, slightly standing but very easy to go.  The length of the road is enough for people to take a breath, then stop, breathe in the fresh air, look up at the towering pagoda or admire the vast, immense plain to help visitors forget their tired footsteps.  but continue the journey.

The unique feature of the temple is not only in its nostalgic and contemplative architecture, but also in its standing position.  The pagoda is divided into several floors along the open-air bridge next to the mountain with steep, craggy cliffs.  The pagoda was built according to that cliff like a giant bas-relief carved meticulously.

In the garden of Hang Chau Doc pagoda, there is a large water lily pond, surrounded by many kinds of flowers to create a fresh green space, mixed with white, red and yellow flowers.  From the garden of the temple, tourists of Hang Pagoda also have the opportunity to admire the picture of the peaceful countryside of An Giang.

The temple has a shrine to worship the statue of Buddha Di Lac, the statue of Bodhisattva Avalokitesvara and 4 dharma protectors standing looking at the foot of the mountain.  In front of the temple, there are two colorful, harmonious, elaborately carved stupas, standing majestically on the mountainside.  The two stupas are also the places to worship the two monks who have the greatest merit in the formation of Hang Chau Doc pagoda, Mrs. Tho and monk Thich Hue Thien.

The lower stupa is the place to worship monk Thich Hue Thien, while the upper tower is the place to worship the female shaman Dieu Thien, or Mrs.  The pagoda also has a work that people dedicate to remembering Phan Thong, who has donated money to build the temple for the first time after Ms. Dieu Thien passed away.

The main hall of Hang Chau Doc Pagoda is not too big but very majestic and decorated with impressive artistic reliefs.  The main hall is the place to worship Shakyamuni Buddha and a number of gods.  Prominent in front of the pagoda is a banner with a height of up to 20m and mascot statues.

Under the temple steps are two rather vivid cement lion statues.  On the left side of the pagoda is the Tay Lang, on the right is the newly built Dong Lang. Going through the main hall to the temple grounds, visitors will find a small temple located in the cave.  The name Hang pagoda that people here give Phuoc Dien self probably comes from this very unique architectural feature.

Inside the cave, lying on both sides of the shrine are two large snake statues of Thanh Xa and Bach Xa with their eyes lit up with lamps, making the space tinged with spirituality and adding a mysterious impression to visitors. In addition to the worship halls, the temple also has other works for tourists to rest or as a place to study and live for monks.

2. Travel Guide to The Ba Chua Xu Temple

The Lady Temple – The Ba Chua Xu Temple in Chau Doc

According to legend, about 200 years ago, local people in Chau Doc discovered the statue of Ba at the top of Sam mountain and wanted to bring it down.  However, dozens of strong young men tried to carry the statue of her, but could not.  Then through her mouth, “Miss Dong” told her that only nine virgins needed to be carried up and down.  But at the foot of the mountain, the statue suddenly became heavy and could not walk anymore.  People think that she chose this place to live here and set up a shrine to worship.

Another legend related to this temple is about the merits of Mr. Thoai Ngoc Hau.  When he went to fight foreign invaders at the border, Chau Thi Te prayed to Ba Chua Xu to help him calm the enemy and keep the village peaceful.  To give thanks for the effective things, Mr. Thoi Ngoc Hau invited her from the top of Sam mountain to build a spacious temple at the foot of the mountain and chose April 24 as the day to worship her.

In the past, Ba Temple was simply built of bamboo and leaves, facing the northwest, the back is turned to the cliff, and the main hall overlooks the road and village fields.  In 1870, the temple was rebuilt by people with bricks from Ho Duoc lake.  During the four years from 1972 to 1976, Ba Temple was rebuilt by two architects, Huynh Kim Mang and Nguyen Ba Lang, to create its present appearance.

On the other legends about the origin of the Ba Chua Xu statue.  According to folklore, in the years 1820 – 1825, the Siamese army came to harass our country and chased the people to the top of Sam mountain when they met the statue of Mrs.  They tried to carry the statue but could not lift it, one of them got angry and broke her arm and he was immediately punished.  Since then, people called Ba Chua Xu and set up a shrine to let Ba Chua bless the rain, good harvest, avoid robbers, and get rid of diseases.

The Temple of Ba Chua Xu has the layout of the word ” Quoc”, the shape of a tower in the shape of a blooming lotus, a three-storey three-storey roof, tiled with blue pipes, the corner of the roof soaring like the bow of a sailing boat.  The patterns in the ancient main hall show bold artistic expression.  Above, strong and beautiful idols spread their arms to support the trusses.  The frames and doors are all carved, engraved, exquisitely decorated with many splendid frames.  In particular, the statue behind the statue of Ba, the four ancient pillars in front of the main hall are almost kept the same.  The architectural complex of the temple has the main hall (where the statue of Ba is worshiped), martial arts, a living room and a chamber of the nobles.  Inside the temple, it is designed and decorated with bold Indian art.  The temple doors are carved and sculpted by artisans.  In particular, many poles and diaphragms here are also inlaid with brilliant gilded vermilion.

The statue of Ba is placed in the middle of the main hall, surrounded by the Council altar in front, Tien Hien and Hau Hien are placed on both sides.  The Uncle altar is placed on the left side, there is a very large stone Linga, about 1.2m high, and the Co altar is on the right side, which worships a small wooden goddess statue, …

3. What to Do –See – Eat at The Lady Temple

The origin of beef noodle soup

There is much controversy about the origin of this dish. Anecdotes say that this dish is completely Hanoi and that Southern word is the old name of Le Duan street now (However, this theory is rejected by most people). However, this dish is often called fried beef vermicelli or fried pork vermicelli. As noted in many literary works in China, this dish is modified by the chef from the main ingredients including protein: pork loin; starch: vermicelli; vegetables: onions, herbs, and bean sprouts; dressing: lemon, garlic are mixed from fish sauce, vinegar, and sugar, creating a strong Southern flavor that Hanoians often criticize as too sweet, too pungent, and not frugal. A typical example is an excerpt from the book Half-Life Left by writer Vuong Hong Sen, published in 1926, “… 1926, there was an old man who came from Thu Duc carrying beef vermicelli and asked to sell and accompany him. Trains do not pay, please remember beef vermicelli, grilled or fried meat and vermicelli noodles, not beef vermicelli, a special Hue dish….”

How to choose to buy fresh beef

To choose good beef, you should observe the color of the meat. Fresh meat is usually bright red, not dark red, and beef fat is light yellow.

Should choose to buy small and soft pieces of meat, smooth texture and good elasticity when pressed.

Do not buy pieces of meat that have white, small and easily removable cysts, it is most likely a fluke. You also limit the small pieces of pre-cut meat, because they are very likely to contain flukes.

How to cook Beef noodle soup

Step 1. Preliminary processing of pork leg, beef encrusted

If you like a lot of meat, choose the hind leg. If you like the skin and tendons rough, choose the front leg, cut it into circles, and wash it.

Boil pork leg in boiling water to remove dirt, then rinse with clean water.

Beef jerky, washed, boiled separately with 1/2 sliced ginger for fragrant. Simmer on low heat for about 2 hours, use chopsticks to test the encrusted pieces, if the skewers pass, they are satisfactory. Wait for the meat to cool and cut into thin slices.

Step 2. Prepare other ingredients

Cow or pig blood can be bought ready-made or bought boiled, cut into bite-sized pieces. (Note to buy blood at reputable addresses to ensure food safety). If you don’t eat blood, you can skip it.

The crab cakes are molded into small round balls and dropped into the pot of encrusted boiling water, the spring rolls are cooked, you take them out and keep them separate. Crab rolls can be replaced with beef rolls, spring rolls or not for spring rolls.

With 4 chopped lemongrass trees, the rest is cut and smashed. Divide the onion into 2 parts, one half cut in half, the other thinly sliced.

Scallions, scallions, basil washed and finely chopped. The accompanying vegetables are washed and drained.

Step 3. Beef noodle soup

Mix 2 tablespoons of fish sauce with 100 ml of cold water.

Fry 4 minced lemongrass plants with 2 tablespoons of cooking oil, remove the lemongrass, and add 3 tablespoons of cashew oil. Finely chop 1 onion, 1 garlic, and 2 chili peppers, then put them in a pan and fry until golden, then turn off the heat.

Prepared pork leg, you put it on the stove to simmer on low heat with 1 onion cut in half and 3 lemongrass trees smashed for a sweet and fragrant broth, all the substance in the bone. (Note that occasionally skim the pot of broth so that the water is clear).

Take the top part of the fish sauce into the pot, remove the residue. Add 2 tablespoons of sugar, 2 tablespoons of seasoning, 1 tablespoon of salt, season to taste.

Add the bowl of chili satay made above.

Step 4. Complete

You pour vermicelli through boiling water, drain and pour into a bowl.

Add encrusted meat, spring rolls, crab cakes, blood, Chinese flavor, finely chopped scallions, a little thinly sliced onion and then pour the broth.

Beef noodle soup served with bean sprouts, banana flowers, basil, and chili are delicious.

Step 5. Finished product

On a cool or chilly morning, there’s nothing better than a delicious bowl of beef noodle soup with the whole family.

The sweetness of the water, the greasy taste of the spring rolls, the crunchy and soft taste of the encrusted meat, the fragrant crab cakes with a little spicy chili and the sourness of lemon. Just thinking about it makes me feel dizzy and crave a bowl of beef noodle soup

5. Pro tips:

Here are our tips for easing your mind (and stomach) around food-handling environments that you may not be used to.

Make sure the food is freshly cooked. If you’re eating hot street food, it’s always safest (not to mention more delicious) to eat food you can see being cooked to order.

Look for lines and busy stalls. Busy street food stalls are an indicator of popularity, and their high turnover rate means the food is never sitting out for hours and developing dreaded bacteria. Yes, long lines can be discouraging when you’re hungry after a full day of exploring, but it’s not worth the risk of grabbing precooked food from the empty spot next door.

Eat when the locals are eating. The last and most important element here is when to eat. You’re likely already on a weird eating schedule while you’re traveling, but it’s important to try and adjust to the eating times of where you are. A bowl of pho might be lunch for Americans, but it’s breakfast for the Vietnamese. This ensures that you’re eating freshly cooked food and that you can find the best and most popular places to eat.

If you can’t drink the water, then you can’t eat the salad. Most people get so hung up on not drinking the water or skipping ice in drinks that they don’t think about all of the other ways in which water is used in food service. Fruits and vegetables tend to be washed with tap water in most places, rather than the filtered water that locals drink—or sometimes it’s not washed at all. If you’re really craving some produce, try fruits you can peel or cooked veggies.

Trust your gut. If you’re unsure about the food or the way that it’s being prepared, then keep moving. Eating street food all over the world doesn’t make you an expert. Every stall and every country are different, and sometimes the rules can be harder to follow. When something doesn’t look, smell, or feel right, don’t eat it! Trust your judgment. Chances are that there’s another spot close by that’s making something more delicious.

Mam (Fermented Fish) – Eat Best Food in Chau Doc

Here, many Mam stalls became famous, known by many locals and tourists everywhere, such as Mam Ba Giao, Mam 9999, Mam 6666… In addition to being sold domestically, Mam is also sold in the country. Export to neighboring countries such as Cambodia, Laos…

According to the people selling here, there are many ways to eat Mam: raw, fried, steamed (sometimes mixed with duck eggs, bacon), and braised. Eating Mam cannot be without eggplant. If eating with raw or fried Mam, using long eggplant and breaking it by hand, cutting it with a knife is not good. And the braised Mam must be a dish, the fruit is round, and taking the whole eggplant shell is stylish. Braised Mam needs a lot of vegetables, but if it lacks water lily, sesbania flowers, and coconut vegetables, it will lose its taste. Thai Mam with boiled bacon, eaten with vermicelli, raw vegetables or rolled rice paper are delicious.

Ingredients for Snakehead Fish Mam

Snakehead fish 1 fish (about 300g)

Grain salt 100 gr

Listen to roasted rice 100 gr

Canopy sugar 100 gr (or palm sugar)

2 lemons

How to choose and buy good ingredients

How to choose to buy fresh snakehead fish

For snakehead Mam, you should choose copper snakeheads to make the most delicious dish.

Choose snakehead fish with a sharp and solid head. The fish is just the right size, neither too fat nor too thin.

Choose fish with uniform color and dark black, characteristic fishy smell.

Avoid choosing too fatty, gray-brown snakehead fish because these are industrially raised fish, the meat is soft, less sweet and when making Mam, it will not be as delicious as copper snakehead.

See details: How to choose to buy delicious fresh snakehead fish to make Mam

How to choose and buy delicious rice

Choose rice with a characteristic aroma that is extremely pleasant and has a beautiful golden- brown color.

Don’t buy rice noodles that have no smell or have a smell strange, light color because this may be made from poor quality rice or have been left out for a long time, when making Mam will not be delicious.

You can easily find and buy rice at markets, food stores or e-commerce sites nationwide.

How to cook snakehead Mam?

Step 1. Processing snakehead fish

After buying snakehead fish, wash, remove intestines, gills, scales under the fins and blood vessels.

Then wash the fish thoroughly several times with diluted lemon juice to make the fish less fishy and less viscous, then drain.

When the fish is drained, cut into 3-4 pieces to taste.

Small tip: To get rid of the fishy and slimy smell of fish, you can also use granulated salt to rub directly on the fish, then wash the fish several times with water.

Step 2. Marinated fish

Put the cut fish in a glass jar, you put 1 layer of fish in turn, then 1 layer of salt, then press down so that the salt fills the gaps in the jar.

Use bamboo or chopsticks to fasten the marinated fish and close the lid of the jar, keep it in a dry place and avoid sunlight for about 5-6 days for the fish to absorb the salt.

Small tip: Depending on your preferences, if you don’t want to eat too salty fish, you can reduce the amount of salt to about 70-80g to marinate the fish. However, do not reduce the amount of salt too much, it will make the Mam pale and not be preserved for a long time.

Step 3. Mixing hearing

After about 5-6 days, the salt dissolves and soaks into the fish, then take out the jar, drain the salt water, add 100g of roasted rice and mix well to let the hearing soak into the fish.

When the hearing is evenly absorbed into the fish, continue to use the chopsticks to tighten the fish, cover the lid to keep in a dry place and expose to sunlight for about 1 month.

Step 4. Complete

Put the pot on the stove, put in the pot 30ml of water and 100gr of powdered sugar, cook until the sugar water boils, then remove the foam to clear the water and help the Mam to be preserved longer. Continue stirring until the sugar water thickens, then turn off the heat, let it cool.

Take out the jar containing the fish that has been soaked in hearing for 1 month, add all the sugar water above, mix well and leave in a dry place for the sugar to penetrate the fish.

After about 2-3 months when the fish has been well brewed, the spices are evenly absorbed into the fish and the Mam is complete. You can take it out to make dishes right away.

Step 5. Finished product

Snakehead fish paste after completion has an eye-catching color and an extremely characteristic aroma. Fish is spiced and firm, you can use Mam immediately or combine with other ingredients to make delicious dishes. Good luck!

This is the crispy water lily stalk, with the bright yellow color of the dandelion flower, the pumpkin flower, the green color of the coconut vegetable, the cilantro, the chives, the water chives, the warm spicy taste of the young ginger, the crunchy taste of the chili pepper.

No wonder nutritionists believe that eating braised fish sauce is enjoying a meal rich in nutrients and variety of substances compared to many “seafood” dishes.

According to the people selling here, there are many ways to eat fish sauce: raw, fried, steamed (sometimes mixed with duck eggs, bacon), and braised.  Eating fish sauce cannot be without eggplant.  If eating with raw or fried fish sauce, using long eggplant and breaking it by hand, cutting it with a knife is not good.  And the braised fish sauce must be a dish, the fruit is round, and taking the whole eggplant shell is stylish.  Braised fish sauce needs a lot of vegetables, but if it lacks water lily, Dien Dien flowers, and rau dua vegetables, it will lose its taste.  Thai fish sauce with boiled bacon, eaten with vermicelli, fresh vegetables or rice paper are delicious.

Pro Tips

Vegetarian Noodle Soup – Eat Best Food in Can Tho

Eating vegetarian noodles soup in particular or being vegetarian in general has positive effects on your health:

– Weight loss

According to Dr. Neal Barnard and colleagues of the Physicians Committee on Medical Responsibility, vegetarians often have an increased calorie burn after each meal compared to those who eat salty foods.

This means that plant-based foods act as a source of fuel for the body, as opposed to being stored as fat.

According to this study, vegetarians are slimmer than meat eaters, and they are placed in the group of people with a lower risk of cardiovascular disease, diabetes, high blood pressure and diseases caused by weight gain and obesity.

– Reduce the risk of cancer

According to the statistics of epidemiologists, 35% of cancer cases are related to eating. Vegetarians are less likely to get sick and die from cancers of the mouth, throat, prostate, and especially colon than those who eat salty foods.

The reason is that vegetarian food is high in fiber and low in fat. Vegetarian foods also contain many substances that have potential to prevent cancer such as antioxidants and some phytochemicals.

– Hypotension

Fasting helps lower blood pressure and reduce the risk of cardiovascular disease. A vegetarian diet is high in potassium, complex carbohydrates, unsaturated fats, fiber, calcium, magnesium, vitamin C and vitamin A, all of which have a beneficial effect on blood pressure.

Vegetarians’ blood pressure tends to be lower than those of salty eaters and increases less with age. Studies show that the more animal foods you eat, the higher your blood pressure tends to be.

Roasted peanuts 100 gr

Rock sugar 3 tbsp

Cooking oil 5 tablespoons

How to choose and buy fresh ingredients

How to choose to buy fresh straw mushrooms

Delicious straw mushrooms are mushrooms with buds, round or cylindrical, if you squeeze a bit hard, the mushroom will taste better when eaten.

Should choose mushrooms with uniform size to make the dish more beautiful and delicious.

You should choose to buy black or gray straw mushrooms, which will be more delicious than the white ones.

Do not choose if the mushrooms have a bad smell, are dull, soft to the touch, if the mushrooms are too large, the mushrooms that have been stored for a long time will not be delicious.

How to choose and buy delicious fresh melon

You should choose fragrant melons when holding a heavy hand, have a dark green skin, and have a natural aroma when smelling.

Prioritize choosing to buy elongated, well-balanced fruits, so choose small or medium ones, as young fruits will taste better.

Do not choose to buy fruits that are too old, the surface has many black dots and is scratched and damaged.

How to choose to buy delicious fresh cassava

To choose a delicious cassava tuber, you should choose the tubers with a light brown skin and a weight equivalent to the size of the tuber.

Besides, the smaller the stalks, the more fleshy, less fibrous, and sweeter and tastier.

Do not choose to buy if the tubers are large but light in weight because these bulbs are often in the soil for a long time, the amount of water in the tubers has evaporated quite a lot, so it will not be sweet and delicious.

In addition, you should not choose cassava roots that are crushed, have a dull color, are dark yellow or have black bruises on the outside. It is possible that these tubers have been wormed or damaged on the inside, even though the outer skin looks relatively normal.

How to choose to buy fresh carrots

Fresh carrots will have a bright, dark orange color, fresh green petioles firmly attached to the stem.

You should choose carrots that, when pressed with your hand, have a hard stem. The shape of the tuber is straight and elongated towards the tail.

Do not choose carrots whose stalks are wilted, the body is bruised, viscous, and bruises appear.

How to choose to buy, where to buy vegetarian rolls

You should choose to buy vegetarian rolls at reputable establishments such as supermarkets or markets to ensure the quality and origin of the products.

For packaged products, you should carefully check the expiry date, the outer packaging is intact, not torn or stained, the product inside is not moldy.

How to prepare vegetarian noodle soup

Step 1. Preliminary processing of vegetables

Peel the melon, wash it, dry it and cut it in half.

White radish, carrot, cassava root peeled, washed, cut into bite-sized pieces about 1/3 of a finger thick.

Straw mushrooms cut off the mushroom legs, wash and cut in half. Price, chives washed, dried. Coriander, remove the roots, wash and cut into small pieces. Basil picks up the old leaves, washes and dries.

Tofu, vegetarian rolls cut into bite-sized pieces about 2 fingers.

Step 2. Fried tofu

Put the pan on the stove on medium heat, add 5 tablespoons of cooking oil, wait until the oil is hot, fry the tofu on both sides until golden brown, then take it out and drain the oil.

Step 3. Cooking broth

Put the pot on the stove on high heat, add 3.5 liters of water to boil, when the water boils, add 1/2 salted radish, cassava root, white radish, carrot, lower the heat and stew for about 10 minutes.

Then add melon, straw mushrooms to the stew for another 20-25 minutes.

Season with 1 tbsp salt, 1/2 tbsp MSG, 3 tbsp rock sugar, 1 tbsp vegetarian seasoning.

Wait for the water to boil again, season to taste, add cilantro, a little pepper to the pot and turn off the heat.

Step 4. Dumplings and prices

Put the pot on the stove on high heat, add 2 liters of water to boil, when the water boils, put the chives in the pot for about 20 seconds, then take them out and drain.

Next, put the noodles in the pot for about 1 minute and then take them out to drain.

How to cook delicious, chewy noodles without being mushy

First, you should separate the noodles into separate strands, if the noodles are too long, they can be shortened to about 20-30cm to fit.

You can soak the noodles in cold water to soften them faster. Do not soak for too long to avoid friable noodles.

When finished boiling, put the noodles in a bowl of cold water, wait for the noodles to cool, then take them out. Doing so will make the noodles crispy and not mushy.

Step 5. Finished product

After finishing vegetarian noodle soup, it will have an attractive and very eye-catching aroma, sweet broth from vegetables combined with soft and chewy noodles.

When eating, you put noodles in a bowl, add broth, add ky tofu, tofu, vegetarian rolls, roasted peanuts and serve with chives and basil, add a cup of spicy fish sauce to increase the flavor!
