Le hoi dua bo Bay Nui – Seven-Mountain Ox Racing Festival – What to See in An Giang

The bull racing festival in the Bay Nui region (An Giang) is held annually on the occasion of the Dolta New Year (the worship of grandparents and ancestors) of the Khmer people in the South.  The traditional festival, which takes place from August 29 to September 1 of the lunar calendar every year, is a cultural activity, steeped in folk colors, and a unique sport with the meaning of remembrance and gratitude to the people of Vietnam.  ancestors and merits of the deceased.

Festival Origins

On Dolta Day, Khmer people in Tinh Bien – Tri Ton (An Giang) often bring food to the temple to offer to the monks to pray for the souls of the deceased to be saved.  On these holidays, young men in Phum Soc (village) bring pairs of oxen to plow the fields to help the temple. When the plowing is done, the cow owners choose pairs of oxen to compete on the fields.  The field has just been plowed with water.  Gradually, the custom has become a traditional sport attracting a large number of tourists to visit and watch pairs of cows compete.

Unique sports culture festival

To prepare for the bull race, people choose a flat field, about 200m in length, 100m in width with tattooed water, plowed many times by the “axle” to have the smoothness of mud, four sides with borders and points.  The destination has an empty road to make a safe stop for the cows.  The main track only needs 120m along the field close to the bank.  The starting place is planted with 2 red and blue flags, each 5m apart, and the same goes for the destination.  Any pair of cows standing in the position of any color flag, the destination point will also follow the color of that flag.

If, during the race, the pair of oxen that runs out of the track will be disqualified and the second ox that steps on the harrow of the first pair is the winner.  And the operator must stand firmly if he falls or falls off the harrow to be considered as a loser.  The “cow racers” are called by the locals, who will control the cows in the race.  The pair of oxen must drag the harrow and the person holding it stands on it to control.  Some cows are also wearing bright yellow rattles, throbbing with joyful music.

3. What to Do –See – Eat at Bull Racing Festival

In the early morning of the bull racing festival, people from all over the world come and stand in rows around the banks carrying gongs and drums, shouting and cheering for their favorite pair of cows.  When the referee’s starting signal was issued, the controller held a log with a small nail attached and pricked the cow’s butt strongly, the cow was pricked with pain, so he was able to rush forward in the enthusiastic cheers of the crowd.  audience, making the festival more attractive, vibrant and exciting.

The person holding the shank of the winning pair will be honored by everyone as the most “courageous” ox in the region.  From the beginning to the end, the festival atmosphere is always filled with clapping, cheering and cheering for the pairs of cows fighting fiercely to reach the finish line.  The splashing water with thrilling chases, along with the cheers, makes the Phum squirrels exciting and bustling.

In January 2016, the bull racing festival in the Bay Nui region was recognized as a national intangible cultural heritage by the Ministry of Culture, Sports and Tourism.

4. How to Make Nui Cam Pancake

Amazing local herbs and leaves for eating with Nui Cam Pancake – Eat Best Food in An Giang

Ingredient

200g pancake flour, 50ml coconut milk, 300g tiger shrimp, 300g bacon, 300g straw mushrooms ,2 onions, 1 carrot, 1 white radish Lettuce, collard greens, herbs, bean sprouts, green onions Seasoning: seasoning, monosodium glutamate, salt, fish sauce, turmeric powder, vinegar

Making

Process materials

Buy fresh bacon, the meat is light in color, not sticky to the touch, and has good elasticity. Bacon is only bought, washed, and cut into thin pieces.

When buying shrimp, you should only choose those that are alive, have a smooth shell, live between fresh and clear bodies, which are fresh, firm shrimp. Black tiger shrimp peel off the shell, cut off the hard antennae, remove the black thread on the back and wash.

Put shrimp, pork belly in a clean bowl, marinate with ½ teaspoon seasoning, 1 teaspoon pepper, mix well to absorb the seasoning and marinate for about 15 minutes.

Peel the onion, wash it and cut it thinly.

Pick the root of the spring onion, wash it, and cut it into small pieces.

Carrots, white radish peeled, washed, grated.

Wash herbs, bean sprouts, soak in dilute salt water for about 15-20 minutes, then take them out to dry.

Mix flour to make pancakes

Dissolve the coconut milk with 400ml of water, then add the pancake flour, add 1 tablespoon of turmeric powder, a little seasoning, salt, sprinkle with scallions and stir until the powder is smooth and there are no lumps. Let the dough rest for about 20-30 minutes for the dough to fully rise.

Since packaged pancakes are usually pre-seasoned, you don’t need to add too much seasoning. Pay attention not to mix the dough too thick, it will make the crust thick and difficult to cook. You can add 1 cup of beer to the flour mixture to make the crust more crispy when fried. This is a way to make crispy pancakes that many people summarize and apply.

Stir-fried pancakes

Put the oil pan on the stove, when the oil is hot, add the meat and sauté it on low heat. When the meat is cooked, take it out, continue to add the shrimp, and stir-fry for about 5 minutes until the shrimp is fragrant.

How to pour delicious pancakes

Put 1 tablespoon of cooking oil in a non-stick pan, wait for the oil to boil. Pour in a patch of batter, tilting the pan to coat evenly. Add shrimp, meat, onion and a few sprouts, cover for about 30 seconds until the dough is cooked. Fry until crispy, fold in half and fry the rest until crispy on both sides. Repeat until you run out of dough.

If you can’t eat the raw bean sprouts, put the bean sprouts on the island with oil or cook until cooked. You can use lard to fry pancakes, the cake will be more crispy and more fragrant. Pay attention when making pancakes, don’t let the heat be too high, the crust will be easily scorched, the meat will be tough and not delicious.

How to make dipping sauce

The pancake dipping sauce is mixed according to the following ratio: you dissolve 3 tablespoons of sugar with ½ cup of fish sauce, ½ cup of warm water, and 1 tablespoon of lemon juice. Add minced garlic and chili to taste.

Making sourdough

Put the shredded white radish and carrot in a bowl, marinate with 2 tablespoons of sugar, 5 tablespoons of vinegar, 200ml of filtered water, mix well and let stand for about 10 minutes for the radish and carrot to soften.

Present and enjoy

Pick up the cake on a plate, present the pancakes with lettuce, green vegetables, herbs, sour food, dip it with sweet and sour fish sauce and enjoy it while it’s still hot.

5. Pro tips:

Here are our tips for easing your mind (and stomach) around food-handling environments that you may not be used to.

Make sure the food is freshly cooked. If you’re eating hot street food, it’s always safest (not to mention more delicious) to eat food you can see being cooked to order.

Look for lines and busy stalls. Busy street food stalls are an indicator of popularity, and their high turnover rate means the food is never sitting out for hours and developing dreaded bacteria. Yes, long lines can be discouraging when you’re hungry after a full day of exploring, but it’s not worth the risk of grabbing precooked food from the empty spot next door.

Eat when the locals are eating. The last and most important element here is when to eat. You’re likely already on a weird eating schedule while you’re traveling, but it’s important to try and adjust to the eating times of where you are. A bowl of pho might be lunch for Americans, but it’s breakfast for the Vietnamese. This ensures that you’re eating freshly cooked food and that you can find the best and most popular places to eat.

If you can’t drink the water, then you can’t eat the salad. Most people get so hung up on not drinking the water or skipping ice in drinks that they don’t think about all of the other ways in which water is used in food service. Fruits and vegetables tend to be washed with tap water in most places, rather than the filtered water that locals drink—or sometimes it’s not washed at all. If you’re really craving some produce, try fruits you can peel or cooked veggies.

Trust your gut. If you’re unsure about the food or the way that it’s being prepared, then keep moving. Eating street food all over the world doesn’t make you an expert. Every stall and every country are different, and sometimes the rules can be harder to follow. When something doesn’t look, smell, or feel right, don’t eat it! Trust your judgment. Chances are that there’s another spot close by that’s making something more delicious.

Linh fish is a type of fish that only appears in the flood season in the Southwest provinces. This fish is rich in protein, lipid, iron, calcium, vitamins A, B1, B2… According to Oriental medicine, this fish has the effect of reducing cough, lowering heat and nourishing blood sugar. Linh fish sour soup cooked with madness treats kidney stones, gallstones and mouth ulcers.

We can see that Sesbania Flower contributed to the creation of this dish. So what is the nutritional value and health benefits of Sesbania seed?

According to Herbalist Dinh Cong Bay, Sesbania seeds have a high protein content (37%). In 100g of dried leaves, there are: 26.30g of protid, 4.2g of lipid, 39.2g of glucid, 14.6g of cellulose.

Health benefits of Sesbania

Herbalist Dinh Cong Bay added that, not only as food, the plant also has many uses in medicine such as:

– The leaves are cooked for drinking water, which can be considered as laxatives, worms shafts. In addition, the leaves also help reduce pain, antibiotic, and anti-inflammatory. Besides, after being washed, crushed with salt, put on the pimples will reduce swelling and help boils heal quickly.

The juice of the Sesbania is also used to treat skin rashes and itching.

3. Sweet & Sour Soup with Siamese Mud Carp Soup & Sesbania Flower in An Giang

Sweet & Sour Soup with Siamese Mud Carp Soup & Sesbania Flower is the convergence of “five folk flavors”: the sour taste of tamarind mixed with the broth, the rich sweetness from the fish meat, mixed with a bit of bitterness on the tip of the tongue of the golden sesbania, dotted with fish. Linh fish in the salty taste of raw fish sauce mixed with the spicy taste of chili peppers is not the beauty of the world, what else is there.

The bowl of hot and sour soup is still smoky with the eye-catching yellow color of sesbania flowers, the fragrant round white first fish makes people crave for it just by looking at it.

Picking up a chopstick and putting it in his mouth, the original taste was bitter on the tip of the tongue, but after a while, it left a sweet taste in the throat like the love of a simple local people. Pick up another chopstick and dip it in a cup of raw fish sauce and then put it in your mouth, oh my gosh the first fish in the season is soft and sweet, adding a fatty panther flavor that makes people unable to let go of their chopsticks. Sip a little more broth that is both fragrant and has a characteristic sour taste of tamarind, eat it and want to eat it again.

The dish is not sophisticated, as simple as the character of those peaceful countryside people, the floating season flowers with a few copper fish create a rich flavor that lingers on people’s hearts, on rainy days. If it’s cold, there’s a bowl of hot and sour soup with a hot pot of rice, there’s no better taste, just thinking about it, I’ve liked it.

This delicious dish can also be eaten hot pot style. In the process of cooking hot pot, you leave the Linh fish and the sesbania flower outside. Just eat and put fish and vegetables in, it will be more delicious

Note

You should choose small fish that will be more delicious than big fish. Choose fresh fish and when washing, do not rub vigorously, it will destroy the fish intestines, causing a bitter taste. Don’t cook fish for too long, it will lose its inherent crispy and delicious taste.

You tear the chicken into a dip with the signature dipping sauce and enjoy. The grilled chicken dish is delicious and attractive, isn’t it? Good luck making this dish!

How to choose to buy fresh chicken

Choose to buy red-pink chicken with no blood clots or bruises on the skin. Avoid buying chickens with dark skin because those are chickens that have died before slaughter.

When buying chickens, you should choose those with slim body, light yellow skin, thin, smooth, high elasticity, only dark yellow in some places such as breast, wings, back.

Use your hand to press on the position (thigh, breast) to check if the chicken is pumped with water or not. If the chicken is mushy, slippery or deformed, do not buy it.

When buying frozen chicken, you need to choose to buy it at reputable supermarkets and stores to ensure product quality.

2. Travel Guide to Chau Giang Cham Village

Chau Doc River Tour

Chau Giang Cham Village is a hamlet with a large number of Cham ethnic groups living, just one river from Chau Doc.  With a distance of 5km by road (it takes more than 20 minutes to travel) and 3.5km by river (it takes more than 15 minutes to travel) if starting from Chau Doc city center.  Moving to Cham Chau Giang village will choose one of these two methods.  Specifically:

If traveling by road, you can use a car or motorbike to get to Chau Giang ferry station, about 3km from Chau Doc city center.  Here, you will wait for the ferry to cross the territory of Chau Phong commune of Tan Chau district.  Through the ferry, you go more than 1km to Chau Giang Cham village.

By river, you will come to Chau Doc junction (about 500m from Victoria hotel) or at Chau Giang wharf located across Chau Doc city to rent a boat.  Boat rental prices at each point will have different rates, depending on where your trip is and how many people you go.  However, one thing that you can be assured of is that the price is relatively cheap and very reasonable.  This is the most popular form of tourists.

Among the Cham villages in An Giang, it can be said that Chau Giang Cham village still preserves many unique cultural features in both material and spiritual life.  Prominent among them can be mentioned traditional brocade weaving, living custom on stilts and Muslim beliefs in the shadow of the mosque.  It is from this that Chau Giang Cham village is often sought by writers, poets and musicians for inspiration to compose many literary and artistic works.

The most prominent among them is the Mubarak mosque which is recognized as a national heritage.  From the Chau Giang ferry, you turn left to admire the beauty of this construction.  The magnificent Mubarak Cathedral – a sanctuary in beliefs and community cultural activities of the Muslim Cham people.  The cathedral has a unique architecture, a round tower, an arc-shaped main gate, very unique.  The roof of the mosque has a large two-story oval tower, the base of the tower has the shape of a crescent moon and a star, symbolizing Islam.  This is one of the works of high value, and is an attractive attraction in Chau Giang Cham village.

Every year they have three great festivals: Roja festival on December 10 of the lunar calendar;  The Ramadan festival (also known as the fasting ceremony) lasts from September 1 to the end of September 30 of the lunar calendar;  The birthday of Patriarch Muhammed is on the 12th day of the 3rd lunar month.  Every day, believers come to the mosque 5 times to pray, about 15 minutes each time.  Particularly on Friday, the devotees come almost fully at 12 noon and focus on listening to the teacher recite the scriptures for an hour.

Regarding the origin of the Cham people here, there are opinions shared: “The Cham people in Chau Giang do not come from the same origin.  Our community consists of many ethnic groups: Malaysia, Indonesia and Cambodia.  “We speak Malay, the other group speaks Cambodian.  If we don’t understand each other, we can use Vietnamese as a common language for communication.”  (according to Mr. Mouhamach, the Church of Mubarak in Chau Giang hamlet).

Another opinion, according to ancient books, is that the Cham people of An Giang originated from the kingdom of Champa – Ninh Thuan.  When the war broke out, they migrated to Cambodia’s Kampong Cham.  Later from there, he migrated to Vietnam and settled in present-day An Giang.  There is still a part of Cham people in Cambodia who are villages around Bien Ho.

Another person said that, with the title of “Victory Cham” the Cham from the central coast, (Ta Kieu – My Son) have been here since the war with Lord Nguyen Phuc Chu’s army in 1699.

Due to Islam (Islam), the Cham’s customs here are also associated with the rules of Islam.  Men wear sarongs – called blankets.  Women wear sarongs called skirts.  Men wear hats, old people have white hats, young people have black hats.  Women wear Mat’ra scarves.  Men here don’t drink.  Cham Muslim women here are often not allowed to go out, but just hang around the house doing housework and weaving.  They don’t eat pork.

Also here, you will be able to visit and learn about the traditional brocade weaving that has existed for hundreds of years.  Although the brocade here is not much different from the brocade of the Cham people in Ninh Thuan and Binh Thuan.  But because of the acculturation, different religious beliefs, each pattern shown on each product has created a distinct impression.

Mixed with brocade products that are completely hand-woven, at the establishment, which is considered a tourist attraction, there are also jewelry items such as rings, necklaces, earrings, earrings, … also by the people.  Care here is very elaborate and eye-catching.  If you want to buy for use or as a gift for relatives and friends, these items are a reasonable choice.

But along with traditional brocade weaving and jewelry making, the highlight of Chau Giang Cham’s religious culture is the wooden stilt houses that are hundreds of years old.  These are really the things that many people care about when coming to Chau Giang Cham village in particular and other Cham villages in An Giang in general.

Unlike the stilt houses of the ethnic minorities in the highlands, the stilt house in Cham Chau Giang village is built very high and completely uses solid precious woods such as rosewood, spokes, coffee…  In particular, there are many houses that use both cedarwood.

Through observation and study, it is known that the stilt house of the Cham people in Chau Giang village is very delicately designed according to a large and airy space with nature.  The house when built will be divided into two types, a small house with 4 rooms and a large house with 5 rooms.  According to feng shui, the facade always faces south and there must be a wooden ladder to go up and down.  The two doors are slightly lower than the head so that when strangers enter the house, they have to bow low to greet the owner.  Depending on the conditions of each family, the type of wood used to build the house will show the class of the owner.

There is a difference in the stilt house in Cham village, there are no tables and chairs inside, so when guests come to the house, the host often spreads a mat or carpet for the guests to sit cross-legged on the wooden floor.  Especially in the house, there is a door frame with a decorative curtain that is decorated with eye-catching decoration to separate it from the inner house.  According to custom, this is a living area completely reserved for women and girls, men are not allowed to enter.  Therefore, this area is very important when guests or people come to the house to play.

3. What to Do –See – Eat at Chau Giang Cham Village

cham minority in chau doc

In this Chau Giang Cham village, Com ni and ca pua are two famous traditional dishes of the ethnic minorities here.  These two dishes are a harmonious combination, complementing each other, the cooking method is relatively sophisticated, unique and quite strange for both Vietnamese and international tourists.

 Fried rice

Fried rice is cooked rice with milk, and raisins are added depending on the individual preferences of each person, while ca pua uses beef to be processed very separately, using many ingredients such as wine, ginger, and water.  Coconut milk, curry, onions, peanuts… create a unique feature for the dish of the Cham ethnic people in Chau Giang.  Rice ni – ca pua carries the sweet and fatty smell of milk, the fleshy taste of peanuts, the salty and sweet taste of beef along with the spiciness of chili peppers and the sweetness of raisins, making diners bewildered.  All give people a delicious feeling, strange mouth, full stomach without feeling bored.

In the afternoon, visitors can see street vendors with typical An Giang dishes.  These are rustic snacks such as silkworm cakes, steamed bananas, sticky rice with cassava.. You can buy a package of 3,000 – 5,000 VND to enjoy on the way to explore.

Ask the price of food at the area selling instant food.  Detecting prices if you want to buy clothes and shoes: For locals in the Bay Nui area, perhaps skillful bidding is not too strange anymore.  But if you are from afar and are afraid to pay the price, the best way is to check the price before buying!  Do this, you will see the same item, the same quality but the price is different!

Be careful with poor quality goods: An Giang is quite close to the Cambodian border, and is a pick-up point in other regions such as Thailand and China, so besides quality products, there are still many poor goods.  quality, imitation of famous brands.  When buying, be sure to look closely at the barcode and the packaging.  Often fake goods will have colors, printing methods are quite careless, if you have a little eye you will immediately detect them.

2. Travel Guide to Ba Chuc Tomb

A 300-year-old tree in Ba Chuc, Tri Ton – Secret Things to Do in An Giang

At the beginning of 1977, the population of Ba Chuc was more than 16,000 people, mainly living on agriculture, traditional handicrafts, and small trade.  This is also the origin and center of Tu An Hieu Nghia religion, with many festivals and ceremonies reflecting the rich spiritual life of local people.

Since the day the South was liberated, together with the whole country, the people of Ba Chuc commune went into overcoming the consequences of the war, trying their best to build a prosperous and happy life.  The peaceful atmosphere here was not long before they had to face the genocidal war caused by the Pol Pot group.

Ba Chuc Tomb – Secret Things to Do in An Giang

On the night of April 30, 1977, at the same time as 14 border communes of An Giang province, Pol Pot sent troops to attack and brutally slaughter our people.  The culmination of this crime was the massacre of 3,157 people in Ba Chuc from April 18 to April 30, 1978.  After 12 days and nights of being occupied by the Pol Pots, Ba Chuc was drowned in a sea of blood.  Wherever they went, they plundered property, burned down public buildings; massacred our compatriots, young and old, men and women.  Scenes of serial murder, barbarism taking place everywhere, no pen can describe it.  Most of the victims were shot, slashed and beheaded.  Many women were raped, staked in private, children were stabbed before killing or tearing people in half, holding their feet and hitting their heads against trees…

Ba Chuc Tomb – Secret Things to Do in An Giang

Phi Lai Pagoda is one of the heavily damaged sites.  Here, the Pol Pots killed nearly 300 innocent people.  Under the temple’s altar, there were 43 people hiding, and 40 people were killed by grenades.  At Tam Buu pagoda, the Pol Pot army arrested more than 800 people, led them to Vinh Thong iron bridge, and shot and killed them.  The fields of Phu Cuong, Ba Chuc, and Tuong mountains lost their cool green color, instead there were hundreds of dead people lying on top of each other.

After the massacre, Ba Chuc was left with only a desolate land with endless pain.  It was the most difficult period of Ba Chuc.  Some survivors lost loved ones, and did not dare to return to their hometown because they were haunted by horrible memories.  But there are also people who have stayed because of their love for the deceased as well as living fully with their homeland.  Many people who fled the enemy returned to face many difficulties: homeless, cattle and livestock were killed, crops and gardens were destroyed.  All facilities were almost leveled, Ba Chuc was engulfed in mourning and full of the smell of death.

After the massacre passed, more than 30 diplomatic, press and United Nations delegations came to witness the crimes of the Pol Pots against the Ba Chuc people.  An Giang Red Cross Society participated in helping people collect the bodies of the deceased for cremation in April 1978.  Everyone took advantage of the search for what was left after the time of Pol Pot’s occupation in the commune.

3. What to Do –See – Eat at Ba Chuc Tomb

Phi Lai temple in Ba Chuc, An Giang

The first tomb house was built right after the southwest border war ended in 1979. At that time, the tomb was built quite simply in the shape of a hexagon with the outstanding feature of 4 arms holding 4 soaked swords.  The blood stuck in the ground, showing the will of the Vietnamese people to hate the barbaric murderers of Pol Pot.

In 2013, the tomb house was rebuilt, a complex of works about 5 hectares wide, including the tomb house, memorial house, hall and Tam Buu pagoda, Phi Lai.

The highlight of the current Ba Chuc Tomb House is designed in the shape of an upside down lotus flower, with 8 lotus petals painted in white, to reduce the scene of mourning and death.  Each lotus petal is a place to display a group of remains by age and gender, such as: 86 women over 60 years old; 155 women between 21 and 40 years old; 88 girls aged 16 to 20 years old; 264 children from 3 to 15 years old; 23 males between 16 and 20.

Visiting this special relic site, visitors can understand the entire history of the massacre in the past, with clear and complete pictures, evidence and annotations at the Gallery.

Tam Buu pagoda in Ba Chuc, An Giang

Although black and white photos have faded over time, the shooting technique is not as sharp as it is now, but many images are realistic, terrifying, haunting viewers, because of the brutality and barbarity of the genocide.

And also in this house, the items such as stakes, awls, knives, hammers… that Pol Pot troops used to torture and kill the people of Ba Chuc in particular and An Giang in general were placed quietly in glass cages, but contains the power to denounce terrible crimes just through a few attached description lines.

Coming to the area displaying the remains, visitors do not seem to feel fear and gloom;  On the contrary, the tomb house is displayed and arranged in an airy way, along with a high and wide space, full of light, somewhat reducing the pain and sadness.  Here, the incense smoke never goes out, there are always people to visit and visit.  Many people could not hold back their tears of sympathy and pity for innocent people.

The old enemies also gradually fade into oblivion, just like how the Ba Chuc people still warmly welcome their new life.  If you have the opportunity to travel to An Giang, come to this land to understand that waking up every morning without hearing gunfire is a great happiness.

More than forty years have passed, from the land of pain with empty hands, the people of Ba Chuc have suppressed their pain, united, and determined to rise up with a strong vitality like the village’s ancient oil tree.  The 300-year-old oil tree in the center of Ba Chuc town, although dead, but one day a flock of birds brought back the seeds of the leather tree, and the sprouts proliferated on the old dry tree, making the tree like to be reborn.  It is a symbol of the strong vitality of Ba Chuc people.  No longer a dead land, a difficult mountainous commune, it has become a bustling town of Tri Ton district.
