Facts: Since ancient times, broken rice has been considered a food to save the hunger of the poor workers. This is because broken rice grains rarely bloom, and the price is cheap, so they can be used in daily meals to save costs.
2. Better to Know Long Xuyen Broken Rice
Initially, broken rice was a popular dish among poor farmers and workers in the Mekong Delta. In years of famine, many people often did not have enough good rice to sell, so they used broken rice to cook because it is always available in the homes of many households and has a long-lasting satiety effect.
Since Vietnam’s urbanization in the first half of the 20th century, Com broken has become popular in most of the southern provinces, including Saigon. After Saigon became a tourist destination with tourists from many countries around the world, many vendors have adjusted the ingredients of Com broken to better suit the taste of foreign diners. In addition, meals later began to be served with forks and using spoons and forks instead of cups and chopsticks.
3. Long Xuyen Broken Rice in An Giang
Although broken rice can have many different ways of processing and reduced, a traditional plate of broken rice usually has the following ingredients:

Ribs – Mainly pork ribs marinated in sweet and sour spices and then grilled.
Cha – Also known as Cha egg, is made from eggs, minced meat, mushrooms, and vermicelli. Egg rolls are prepared into a round or rectangular cake, when served, they will be cut into small pieces.
Eggs – Usually an omelet.
Pork – It is a mixture of many things including sliced pork, shredded pork skin mixed with hearing and spices.
Pickles – usually made from tomatoes, carrots, radishes, cucumbers, pickles and possibly papaya
Sometimes, broken rice is also served with braised pork, tofu stuffed with meat, fried fish, chicken, vegetables, and fried food… just like regular rice. This type of food can be seen at Com broken restaurants with many office workers
4. How to Make Long Xuyen Broken Rice
Ingredients for a standard broken rice dish
4 medium pork chops
300g broken rice
60g white rice for hearing
100g pork skin
3 chicken eggs
50g lean ground pork
50g vermicelli
Dried cat mushrooms
5 small lemongrass plants
Minced garlic, minced red onion, minced chili
Finely chopped scallions
Vegetables served: tomato, cucumber, carrot, white radish
Spices: honey, fish sauce, monosodium glutamate, salt, oyster sauce, ground pepper, sugar, vinegar.
Note: To have delicious tender ribs, you should choose cutlets that have both the bone and the outer layer of fat so that they do not dry out when grilled.
How to cook delicious pork ribs with rice
Step 1. Cook rice
Bought broken rice is washed 2-3 times and cooked in the rice cooker as usual.
Note: In order for broken rice not to be mushy, you should keep the amount of water about one knuckle.
Step 2. Make the grilled cutlet rib
Buy cutlet meat, wash and dry with a towel. Next, use a hammer to beat the meat to make the meat thinner and softer (If you don’t have a meat hammer, you can also use a regular pestle).
Marinate meat according to the recipe: 5 smashed lemongrass sticks, ½ tablespoon monosodium glutamate, 1 tablespoon seasoning, 1 tablespoon honey, 2 tablespoons oyster sauce, 1 tablespoon fish sauce, ¼ teaspoon ground pepper, 1 tablespoon minced shallot, 1 tablespoon, minced garlic and Cook rice for pureed broken rice. Mix well and marinate the meat for 1 hour.
Grill each piece of meat on the charcoal stove until golden brown on both sides. If you bake with an oven or an oil-free fryer, you can adjust the temperature to 180 degrees C for 30 – 45 minutes.
Note: While grilling, you should brush more oil on both sides of the meat to prevent the meat from drying out.
Step 3. Make steamed egg rolls
Soak dried black fungus in warm water for 20 minutes to bloom, then wash, cut off the legs and chop. The vermicelli soaks for 10 minutes and also takes away the chopped.
Mix well minced pork, wood ear and chopped vermicelli. Crack in 2 more eggs and 1 white (1 yolk left to color the topping). Then season with 2 tablespoons of salt, 1 tablespoon of sugar, 1 tablespoon of fish sauce and 1 tablespoon of minced shallot. Mix well so that the ingredients are evenly coated.
Put the egg rolls into the steamer for 30 minutes. Then put the remaining egg yolk on the surface and steam for another 10 minutes to finish.
Step 4. Make pork skin
Purchased pork skin is washed and boiled quickly for 15 minutes to keep its toughness.
After taking out, immediately put the pork skin in ice water to keep it crispy. Soak pork skin for 5 minutes and drain. Thinly slice the pork belly.
Making: Roast 60g of white rice until it turns golden brown. Let the rice cool completely and put it in a blender.
This is one of the ways to make broken rice or how to mix delicious broken rice that you cannot ignore.
Note: You can also buy ready-made hearing aids to save time.
Mix hearing into the chopped skin to complete the pork skin.
Step 5. Make Sours
Chop carrots and white radishes
Buy white radish and carrot, wash, peel and grate into small pieces.
Mix 100ml of vinegar, 3 tablespoons of sugar and half a teaspoon of salt and pour into the shredded tubers. Mix well and soak for 1 hour.
Pickled foods can be picked up and used immediately after soaking for 1 hour
Step 6. Make the onion fat
Finely chopped green onions add ¼ teaspoon of salt, ¼ teaspoon of sugar and mix well.
Cook the cooking oil and add it to the prepared scallions. Mix until the scallions are fully cooked.
Step 7. Prepare fish sauce
Bring to a boil and stir a mixture of 3 tablespoons fish sauce, 3 tablespoons sugar, 3 tablespoons warm water and 1 tablespoon vinegar. Let the mixture cool, then add ½ teaspoon of fish sauce and ½ teaspoon of vinegar, season to taste.
Wash the red chilies, pour enough cold water over the peppers and boil until the peppers are soft.
Use a spoon to grate the chili. Heat 1 tablespoon of cooking oil, add 1 tablespoon of garlic and saute until fragrant, then add the chopped chili. Add 1 tablespoon sugar, 1 tablespoon vinegar, boil for about 5 minutes, turn off the heat to cool, then add the chili mixture to the cooked fish sauce.
Mix well and complete a cup of rich fish sauce for a delicious broken rice dish.
Step 8. Finished Product
Put the cooked rice in a bowl and turn it upside down on the plate for a nice shape. Drizzle more onion fat over the rice for color.
Slice tomatoes and cucumbers and remove the soaked pickles. Place the grilled ribs, egg rolls, pork skin and a cup of mixed fish sauce around the rice to complete a delicious home-made broken pork ribs with pork belly.

Most people get so hung up on not drinking the water or skipping ice in drinks that they don’t think about all of the other ways in which water is used in food service. Fruits and vegetables tend to be washed with tap water in most places, rather than the filtered water that locals drink—or sometimes it’s not washed at all. If you’re really craving some produce, try fruits you can peel or cooked veggies.
Trust your gut. If you’re unsure about the food or the way that it’s being prepared, then keep moving. Eating street food all over the world doesn’t make you an expert. Every stall and every country are different, and sometimes the rules can be harder to follow. When something doesn’t look, smell, or feel right, don’t eat it! Trust your judgment. Chances are that there’s another spot close by that’s making something more delicious.
