4. How to Make Duck Meat Pancake
Ingredients for making duck meat pancakes
1 duck breast
200g pancake flour
1 teaspoon turmeric powder
100g green beans
1 cup coconut milk
1/2 onion
100g bean sprouts
Green onions, herbs of all kinds, broccoli, lettuce…
Spices: Sugar, salt, seasoning, monosodium glutamate, fish sauce, garlic, chili, lemon, etc.
How to make duck meat pancakes
Step 1: Prepare ingredients
First, remove the bones and then mince the duck breast, then marinate the duck meat with spices including a little salt, seasoning, sugar, MSG, mix well, let the meat infuse the spices for about 30 minutes.
Green beans are washed and then soaked in warm water for about 30 minutes, washed and then steamed.
Peel the onion, wash it and cut it into thin slices. Pick the scallions, remove the roots, wash and cut into small pieces. The rack is washed and dried. All kinds of herbs are picked up and soaked in salt water, then washed a few times to clean and then dry.
Step 2: Make the dough
Similar to how to make regular pancake dough. You also put rice flour in a bowl with turmeric powder and a little salt, mix well, then slowly add coconut milk and filtered water. Just add the water and stir with your hands until the mixture thickens and there are no lumps. Note that the flour mixture must not be too liquid or too thick, which will affect the quality of the cake when finished. Finally, add finely chopped scallions and mix well.
Step 3: Make the dipping sauce
Duck cake dipping sauce is mixed with the ratio of 1 part fish sauce, 1 part sugar, 1 part vinegar, 5 parts water and then dissolved together. Finally, add minced garlic and chili and finely chopped white radish and red radish to make sour food for the dipping sauce. You can increase or decrease the following ingredients to suit your taste!
Step 4: Fry the cake
Put the pan on the stove and cook on medium heat, then add a little oil to coat the entire surface of the pan. When the oil is hot, add a little fragrant sauteed onion, then add minced duck meat to the pan, spread the meat evenly, then scoop a patch of flour and pour it quickly into the pan, then evenly coat the surface of the pan. Next, spread the steamed green zucchini with the rack and cover for about 3 minutes until the cake is golden, then open the lid and stir for about 1 more minute until the cake is golden crispy, then fold the cake in half for a plate. Keep doing this until you run out of ingredients.
Step 5: Done
When the cake is finished, you can put the cake on a plate with a plate of vegetables and a bowl of sweet and sour sauce to enjoy. The outside layer of cake dough is crispy, the inside is delicious duck meat served with vegetables and dipping sauce.
