Minh greeted us with a smile and strong Vietnamese coffee (thank god). We were all sleepy, but as the sun started rising and the market came alive, we were fully awake.
It’s hard to describe the energy of that floating market — not chaotic, just… human. The pineapple boat, the sellers laughing, the sun reflecting off the water — everything felt vivid.
The noodle house was fantastic. We saw each step and met the family who’s been doing this for generations. Their noodle-pizza thing was unexpectedly tasty!
And gliding back on those narrow canals? Quiet, green, real. We had a delicious local lunch and returned to Saigon with a full heart.
