    I wasn’t sure if waking up at 4:30 AM would be worth it, but it absolutely was. Lam was waiting for us with a smile, and we were soon cruising along the Mekong as the sky turned pink. The floating market felt like a secret world opening up before our eyes. Lam shared so many personal and cultural insights—it was like walking through a history book, but alive. We tried fruits I had never tasted before, and the noodle-making family was incredibly gracious. Watching them work was a privilege. The noodle pizza? A surprising highlight!
